Vegan Lemon Loaf with Lemon Glaze
This delicious and sweet quick bread is a crowd pleaser every time. With it's wholesome flavors and subtle sweetness, you'll be in lemon heaven!
Ingredients
- Vanilla Baking Mix - Entire package (only works with Mouth of Mundus brand)
- Neutral Oil (anything you have on hand will work) - 1/4 cup
- Non-Dairy Milk or Water - 3/4 cup
- Lemon Extract - 1 teaspoon
- Lemon Glaze
- Powdered Sugar - 2 cups
- Non-Dairy Milk or Water - 2 tablespoons
- Lemon Extract - 1 teaspoon
Instructions
Preheat oven to 350 degrees. Add all ingredients for bread in a large mixing bowl and stir well to combine. Once thoroughly mixed, pour into any sized loaf pan (whatever you have will work-just watch the baking times!) Bake for 45-55 minutes or until golden brown. You can make the glaze while you allow it to cool.
For the glaze simply combine all glaze ingredients in a small bowl and mix well. Pour over a moderately cooled loaf and allow to finish cooling (if you can wait that long!)
