Vegan Berry Cobbler
Summer in many places means fresh berries and this recipe is a perfect way to showcase your local produce. Quick and delicious, it's a very impressive dish to bring to parties or devour by yourself on the couch. Don't worry, we won't tell anyone.
Ingredients
- Vanilla Baking Mix - 2 cups
- Non-Dairy Milk - 3/4 cup
- Non-Dairy Butter Substitute-melted - 1/2 cup
- Fresh or thawed berries - 2 1/2 cups
Instructions
Preheat oven to 350 degrees. Combine 1/2 cup of baking mix with berries in a bowl and allow to sit for 20 minutes to allow juices to form. Combine remaining ingredients in large mixing bowl until blended. Pour batter into ungreased 9x9 or 8x8 pan. Spoon berry mixture on top of the batter. Bake for 40-55 minutes or until golden brown. Remove from oven and serve warm with a scoop of your favorite non-dairy ice cream or Mundus Whipped Cream or Mundus Heavy Whipping cream.
*You can also use our Mouth of Mundus Pancake, Waffle Mix for a lower sugar option. Mix the berries with 1/4 cup of granulated sugar instead of bake mix and use 2 cups of the mix for the batter. Just as delicious and healthier!
