Vegan Banana Pancakes
Remenicent of a great song, these banana pancakes will make it feel like the weekend, any time. They're light and have just enough banana flavor to take your breakfast game to the next level!
- Mouth of Mundus Pancake, Waffle and Biscuit Mix - 2 Cups
- Mashed Ripe Bananas - 1 Cup (about three)
- Non-Dairy Milk - 2 Cups
- *optional Vanilla Extract - 1 teaspoon
Preheat pancake pan, skillet or griddle to 300 degrees. Add mashed bananas, optional vanilla extract and non-dairy milk to large bowl and whisk for about a minute to combine well. Add vegan pancake mix and stir to combine until all dry ingredients are saturated. Allow to sit for 5-10 minutes to let batter thicken. Pour onto hot skillet and cook until bubbles form across the top and the edges look golden brown (about 4 minutes.) Flip and cook until both sides are golden brown. Top with non-dairy butter and syrup and enjoy! For an extra delicious treat, add some fresh fruit, chocolate chips or whipped cream. If you're feeling especially adventurous, try all three!
