Vegan Sheperd's Pie
Dinner is a breeze with this easy and delicious recipe for Sheperd's pie. Any protein can be substituted for the quinoa, we just like it cause it's a complete protein and it's a whole food meat alternative. Warm, creamy and comforting, this recipe makes those cold winter nights a bit easier to bear.
- Prepared Mundus Mashed Potato Mix - 5 oz (entire package)
- Prepared Mundus Cream of Everything Soup Mix - 1 Cup
- Cooked Quinoa - 1-2 Cups
- Canned Carrots - 1/2 Cup
- Canned Peas - 1/2 Cup
- Chopped Brocolli - 1/2 cup (optional)
- Vegan Cheese - 1/2 cup
Preheat oven to 375 degrees. Lightly grease a glass 9x9 pan or casserole dish. Add all the quinoa to the bottom and then add whatever veggies you're using. Pour half the prepared soup over the casserole and reserve the other half. Top with prepared mashed potatoes and then top with remaining soup and whatever vegan cheese you prefer. Pop it in the oven until bubbly and heated throughout. Allow to set for five minutes before serving and then enjoy!
